First of all, what is a paillard? Although it sounds fancy, it is simply a piece of meat that is thinly pounded and cooked quickly.

And it’s one of the easiest and most versatile ways to prepare meat I’ve ever found. By pounding the meat into a thinner version, it cooks quickly and evenly, making it less likely that you’ll dry out when trying to cook it.

Another plus is that you can feed more people with less meat. Although this recipe calls for 2 chicken breasts, when you pound them, they are large enough that you can cut them in half to serve 3 or 4 people.

Delicious Chicken Paillard Recipe

Ingredient:

  • 2 boneless chicken breasts
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil, divided
  • 1 teaspoon dried oregano (optional)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon lemon zest or zest (optional)
  • 1 tablespoon butter

Instruct

  • Open a large gallon-sized Zip-Loc bag and add lemon juice, 1 tbsp. olive oil, oregano, salt, pepper, and lemon zest (if using). Massage the bag a little to mix all the ingredients together.
  • Place the chicken breasts in a bag and seal. (Note–if you’re duplicating the recipe, do this step in two batches.) Using a mallet/softener or the back of a heavy skillet, flatten the chicken breasts to about 1/2 inch thick.
  • Place a large frying pan or skillet over medium to high heat and add 1 tbsp. olive oil and 1 tbsp. butter. Return the chicken to the skillet and fry for 10 minutes or until fully cooked, turning occasionally – a little longer depending on the thickness of the chicken. If preparing more than 2 chicken breasts, you may need to cook the chicken in batches or use two frying pans here.
  • Once the chicken is cooked through, remove to a plate and drizzle with sauce, if desired.
